Chewy Chocolate Chip Oatmeal Cookies

Chewy Chocolate Oatmeal CookiesAs a kid I never liked oatmeal cookies — because they were always made with raisins. Now I’m no raisin hater, they just don’t belong in cookies. These chewy, chocolatey cookies will delight you!


  • 1 C butter, softened
  • 1 C packed light brown sugar
  • 1/2 C white sugar
  • 2 eggs
  • 2 t vanilla extract
  • 1-1/4 C all-purpose flour
  • 1/2 t baking soda
  • 1 t salt
  • 3 C quick-cooking oats
  • 1 C chopped pecans
  • 1 C semisweet chocolate chips


  1. Preheat the oven to 325°.
  2. In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in eggs one at a time, then stir in vanilla
  3. Combine the flour, baking soda, and salt. Stir into the creamed mixture until just blended. Mix in the oats, pecans, and chocolate chips by hand. Drop by heaping spoonfuls onto ungreased baking sheets.
  4. Bake for 12 minutes. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.


  • Use 1 cup butterscotch chips and 1 cup chocolate chips in place of 2 cups chocolate chips. Oh, my!
