Choclate Crepes with Strawberries BananasWe woke up after a warm spring day in the high 60s to find bright sunlight and three inches of glistening snow everywhere. A perfect Sunday morning to snuggle up with a yummy breakfast treat.

  • 2 C milk
  • 2 eggs
  • 3 T butter, melted
  • 1-1/2 C flour
  • 1/3 C unsweetened cocoa powder
  • 1/3 C sugar
  • 1/2 t salt
  • 1 C strawberry jam
  • 2 C sliced strawberries
  • 2 C banana slices
  • Powdered sugar

  1. Combine milk, eggs, butter, flour, cocoa powder, sugar, and salt and blend until smooth, about 1 minute.
  2. Cover and refrigerate for at least 2 hours.
  3. Heat a skillet over medium-low heat. Coat the pan lightly with melted or oil. Pour about 1/4 cup of the batter into the center, tilting the pan to spread the batter to the edges. Return the pan to the heat and cook until the crepe is golden underneath, about 1 minute. Flip the crepe over and cook for 1 minute more. Transfer to a plate and cover. Repeat with the remaining batter to make about 16 crepes.
  4. To assemble, lay a crepe flat, spoon 1 tablespoon of the jam into the center and fold the crepe into a triangle. Repeat with the remaining crepes and jam. Top with fruit. Sprinkle with powdered sugar.
